Winning Vegan Burritos

Who says that a Burrito to be good has to be meaty? These Vegan Burritos will make you want for more, knowing that they have all the ingredients for a balanced meal: beans and brown rice for your protein, plenty of veggies and with the right amount of carbs!

Ingredients

  • 5 tortilla wraps the one that you prefer
  • 2 cups brown rice (boiled)
  • 2 cups black beans (boiled)
  • 1 ripe avocado
  • 1 lemon
  • 250 gr cherry tomatoes
  • 1 red onion
  • 1/2 (half) red pepper
  • 3 cloves garlic
  • 2 tsp cumin seeds
  • 2 tbs ground coriander
  • 1 tbs ground pepper
  • 2 tbs turmeric powder
  • dried hot chilly (if you want)

Instructions

Cooking rice & beans

  1. Pour some extra virgin olive oil in a frying pan.

  2. Squeeze in the garlic and when the oil is warm add the spices.

  3. Stir continuously for a couple of minutes, and then add the rice and the beans.

  4. Give it a good stir so that the spices can give a good flavor to the ingredients,. Don't forget to add salt.

  5. Set aside.

Preparing the avocado spread

  1. Peel and deseed the avocado and squash the pulp with the fork to obtain a creamy consistency.
  2. Squeeze in one lemon.

  3. Add salt.

  4. Set aside.

Preparing the fresh vegs

  1. Slice the onion, the tomatoes and the pepper in very thin and small slices.

  2. Add a bit of salt and mix together.

Assemble the burritos

  1. Now it is time to assemble the burritos: take the wrap and spread some of the avocado cream on them.

  2. Place 1 or 2 tbsp (depending on the size of the wrap) of rice and beans in the central part - almost at the bottom of your wrap.

  3. Pour 1 tbs of vegetables on top of the rice and beans.

  4. Wrap the tortilla as you prefer around this winning filling!!
